Breakfast Tacos

I could honestly eat tacos for every meal for the rest of my days….

This is my go-to breakfast if I want something quick. It is so easy to make and also very flexible in terms of modifications.

What you’ll need:

  • 2 eggs

  • Mushrooms

  • Avocado

  • Tortilla (I used corn)

  • Hot Sauce (I used salsa verde)

  • Salt + Pepper

  • Olive Oil

How to make it:

  1. Preheat a pan on low/medium heat. Once hot, add the oil. This prevents the oil from burning.

  2. Crack the eggs and make sure not to break the yolk. Bring the heat to medium/high and after ~90 seconds, add a splash of water to the pan and cover with a lid. This will cook the top of the egg with the steam without overcooking the yolk. Remove from heat after ~60 seconds.

  3. As the eggs are cooking, I like to char the tortillas directly on the flame of the stove. Place directly on the flame for ~30 seconds on each side. The char adds great flavor! Plate the tortillas and then layer one egg on each.

  4. In the same pan as the egg (ain’t nobody got time for extra dishes), sauté the mushrooms with garlic and olive oil for 1-2 minutes. Add to your tacos.

  5. Finish it up by adding a slice or two of avocado and top with hot sauce for a nice kick!
